Angela's Risotto






Ingredients (for  1):

·        1 small cup of risotto rice
·        Half courgette
·        2 sausages
·        ¼ onion
·        Olive oil





Preparation:

This dish is perfect to reheat in the microwave at work and it is very quick to do! It is important to use the risotto rice as it gives the meal good texture.
1.       Cut the onion very small and fry it in the pan with 1 spoon of olive oil and salt.
2.       When it’s almost done (the onion should be transparent, never brown), add the courgette sliced in cubes and the sausages previously cut into small pieces.
3.       Add the rice and mix; then add 2 cups of water and leave it for 15 min.
4.       Done! Place the risotto in the tupper and add spices as you like (pepper, persil..) and some parmesan cheese! Yummyyyyy!!
